This past Friday was the first sign of Fall weather. This gets me super excited. I love Fall. I love the weather, the smell of leaves burning, camping, apple picking, candles burning, windows up, carving pumpkins, baking cookies and pies, daylight savings time ending, Halloween, scary movies, fires in the fire pit, roasting marsh mellows, Fall decorations, football, hoodies, sweatpants, extra quilts on the bed, rides to the mountains to see the leaves after they change colors, etc . . . Also, the first sign of cooler weather means homemade soup time! I am just like my daddy. As soon as the weather hints at cooling off, I am planning on homemade soup. I love his vegetable soup. I could never duplicate that. There is no recipe. It's just him and his ingredients. I can, however, bake a mean cake of cornbread. Last Friday, I made the first batch of potato soup. A friend from high school gave me this recipe via Facebook. Thank you Nikki Nash. My family loves this soup!
Nikki Nash's Potato Soup
1 49.5oz can of Swanson's chicken broth
1 bag of frozen diced hash browns
1 diced onion
1 can cream of chicken soup
1 can cream of mushroom soup
1 8oz block cream cheese, cut into cubes
shredded cheddar cheese
cooked bacon pieces
Mix all the ingredients together and let boil for 30 minutes. Sprinkle cheddar cheese and bacon bits on top after putting soup into the bowl.
Here's how I amended the recipe: I use shredded hash browns. I mix everything but the hash browns together and boil for 15 minutes. Then I add the hash browns and boil another 15 minutes. Also, I grate fresh cheddar cheese for the soup. Freshly grated cheese melts better than packaged cheese. Finally, I use the real bacon bits found in the salad section of the grocery store. Not the hard pieces but the ones in the resealable bag. This saves time and taste just as good. I like to serve this soup with Hawaiian sweet rolls, yeast rolls, or sourdough bread.
I had some of my daddy's homemade soup this past Sunday. I called him Friday and asked him which day that weekend he was going to fix a pot of it. I knew he would. I guess my momma is right. The apple really doesn't fall too far from the tree.
